You need to be careful with the amount of fat you include in baked goods or it will affect the amount of air the the crumb can trap into it, making it overly dense instead of just moist and delicious. It's a very delicate balance.

Bananas are used as an egg substitute. It only impedes flavor if u add too much banana.

Didn't even realize we were talking about cookies. Cookies don't have that same issue because you don't need a lot of air in cookies they're meant to be dense. However I also don't make cookies that often.
