The masa is literally the same stuff corn tortillas are made of. That's why it's bizarre to me.

Yup.

And I know, masa again.

But steaming vs. grilling vs. frying results in distinctly different end products. And I only like 1 of them.

Tortilla chips are grilled then fried.

Just frying masa comes out with corn chips, a la fritos.

Also adding confusion, masa is the word for both the corn flour and for the corn flour dough.

Yeah, no problem with the filling. It's literally only the masa I don't like.

I know, didn't think I needed to specify. I've made my own tortilla chips out of corn tortillas.

Just frying masa comes out with corn chips, a la fritos.

Fritos aren't masa, they're normal cornmeal. Cornmeal is only masa after it gets nixtamalized.

I like tortilla chips more than corn chips.

What are your thoughts on other non-wheat-based doughs? Rice dough, as for pad Thai noodles, for instance.

well, you're right about that. But still if you fry it without grilling it's closer to a frito than a tortilla chip.

I like most doughs, it's mostly just cornmeal/masa dough I don't like. Rice noodles are tasty. So are buckwheat noodles. And cellophane.

I honestly didn't like corn tortillas as a kid. It wasn't until they were the closes I was going to get to a quesadilla again that I learned to like them.
