Aight so what I'm gonna do

Ima get some firm tofu and crumble that shit up
Gonna sautee--with butter and olive oil--some garlic and onion for flavor
Gonna throw that tofu in and sautee it yessir
In the process I'll add some apple cider vinegar, coriander, cumin, a bit of oregano and smoked paprika, and a tiny bit of cinnamon and cloves
I might add some lime juice. Not sure yet. Actually no, I won't, the lime juice can be on other dishes. Contrast and all that. Plus it's got acid already.
Probably needs salt and pepper to taste.

Anyway I looked at these two recipes.

Then
Gonna dice some onion and bell peppers and get some canned sweet corn. Gonna sautee that in olive oil/butter too. Less oil than the tofu though. I want this shit to get a bit charred so them onion pepper and corns are like roasted with the onions slightly caramelized.
That's a side topping.

Then some finely chopped lettuce
Some diced tomato. Or pico de gallo. I can probably get pico de gallo here. Or just make it myself. The tomatoes are most of the work anyway. We'll see.

Oh I should make gaucamole too. I can't eat it myself, but my guests would love it.

Didn't my roommate say she had a blender? If so I can chop some of the sweet corn and the onion into very fine pieces, use that in the guacamole. Definitely cumin, chili, and lime. I'll go easy on the chili and add lemon juice to mine too. I won't add tomatoes since we'll have either tomatoes or pico de gallo already.
I feel like the key to guacamole (from back when I could digest it) is the lemon and lime juice. And salt of course. Corn goes really good in it but I don't want this one chunky so finely chopped corn would be good. I feel like everything else is fungible, but finely chopped onion (or hell, powdered onion even) is a good addition.

I'll buy some limes and have them as a topping. To squeeze.
Sour cream
Cilantro (coriander herb)
Green onion
Thems all sides toppings.

I think canola oil specifically might be a good idea. I'll have to get some.

Frying my own taco shells would be awesome but I'm already doing a lot here.
I will do that if I set up an electric skillet outside and have a helper manning the taco shell station.

And that can be new years eve party vegetarian tacos.
