I've only had it once and it wasn't much different than vanilla to me but I'm sure it varies based on the recipe and type of potatoes used.

I can understand at its core what it is but I can't really understand the why of it. I cant see the addition to mashed potato to an ice cream base being an improvement in any way. When mash gets too liquidy it gets gritty, when it gets overwhipped it becomes sticky and stretchy.

Not even mentioning the flavour at all I just don't understand why someone would look at either ice cream or mashed potato and think... yenno what?
