Rhubarb has no bitter taste it's tart which is sour which is a different primary flavor than bitter.
And yeah people who suck at cooking tend to just annihilate the tartness completely with excessive amounts of sugar and you just end up with a gross overly sweet pie. Or they go the hack route and just make a strawberry rhubarb pie.
A good rhubarb pie is balanced between sweet and tart just like a good apple pie.
