I have masa, so I could. But it's a hassle, especially without a tortilla press. I could probably make some sopes, but they won't be as pliable.

Of course, they make wheatless "flour tortillas," but they're mega brittle and taste weird.

I can just eat more tiny tacos and it'll be fine.

So bacon, sausage, cheese, sour cream, Cholula and potato, right? What kind of sausage is that, standard pork breakfast sausage?

I have to dock points for hot sauce instead of salsa and for CoJack (the D student of cheese) but otherwise p tasty looking 8/10 would eat.

Forgot the eggs, but yeah.

Also didn't have chorizo or breakfast sausage, so I used hot Italian sausage. Put enough chili powder in it and it doesn't taste weird.

I used Colby Jack because our Mexican cheese blend (monterey jack, asadero, queso blanco, and cheddar, if I remember correctly) turned into blue cheese, and so I sliced up some deli cheese. Was okay.

And I like salsa, but I have to be in the mood for that much tomato.

Italian sausage is a clever substitute. I had been thinking the sausage didn't really look like breakfast or chorizo. I guessed breakfast because it wasn't red enough for chorizo.

How is it on fennel seeds? That would be my biggest concern. I hate when Italian sausage is heavy on fennel seeds. It's best when they're toasted and ground.

This brand doesn't have whole seeds. I can taste the fennel, but no dry seeds stuck in my teeth.

Except no bacon this time and I used cheddar for half of them.
