Have you tried onigiri? It's simple but can be kept in the fridge for yummy lunches :)

I recommend start with easy ones. The first one chirashi sushi (or chirashizusi), you do not need to follow one hundred percent the recipes, only the base of rice, and can use ingredients easy to find to you, be creative. the second one tonjiru (a kind of miso, vegetable and pork stew or soup).
