pan fried mackerel fillets and egg fried rice. all made from scratch cos I'm on holiday this week and I actually have time to cook something healthy and decent for a change. i even gutted and filleted the fish, god bless YouTube instructional videos lol.(although I am still on the fruit diet but I gotta cut it back a little cos I found out yesterday after a blood test last week that I'm diabetic)
