I love coconut but raw coconuts are terrible to work with and canned coconut is only really good for curry. You'd have to convince me something fierce. If it's just coconut flavoring, I'd be wary of it anyway. Coconut flavored rice often comes out terribly.

jicama (if you can't get it, green apple)
cucumber half-slices
napa cabbage in little bite-sized pieces (green cabbage if no napa)
all pickled in rice vinegar (if you don't have it, white vinegar, or if it's too expensive, 50/50 mix maybe? should be fine) at least overnight with some sugar, salt, and rosemary.
I wonder if walnuts would be good in this salad too

I usually use apple vinegar because I have a jug of it.
So I'll probably use this. But besides that, sounds good.

Napa probably be best since it's a vinegar thing. It grew into a sunomono kinda deal but with more sharp flavors than sweet. green cabbage is probably the next best.
canned sweet corn should be fine but I think I'll...shit I'm making this salad part at the place I live, so I guess I'll probably do that too :/
If I had an opportunity at my parent's kitchen before then I'd buy fresh local corn and cut it off the cob.

The narial chawal recipe I have uses coconut shreds. This is something available in the baking section usually. Is it available for you?

OK, what about baked rice with apples etc.? I have a recipe for that as well.
