ah i know what you mean, like the Slayers NEXT theme is my absolute favourite but when i listen to it i do get a cheesy vibe from it - i appreciate that however, you can tell that the producers have taken their job seriously in producing a theme tune that sticks in your head as people are still enjoying it 20+ years after it was released, but you're right about music that's in the actual episodes, Gravitation (for example) has a playlist that is really quite enjoyable even if it only appears in maybe 2 or 3 episodes :3 i'm quite passionate about 90s anime, hence my rambling response so my apologies for making you read this much!
Ah, ramble as much as you need to!
My favourite is still "Fairy Tail main theme", purely because of how Yasuharu Takanashi has managed to implement it so effortlessly in so many different ways to suit the theme of an episode, or part of an episode. If you have never cried whilst watching this show, partly for the music, you have no heart
But yeah, Yasuharu Takanashi did most of the in episode music for Fairy Tail and most of it is spectacular. Would put it up there with my all time OST's.
The Main Theme
Then they slow it down and completely change it, usually when nothing is going right and they're on the verge of defeat. Cue inspirational monologue about love and friendship that brings tears to the eyes.
And to top it off, they made it sadder
